This critical thinking course (AthabascaU, Phil 152) I'm doing is incredibly interesting and useful. It teaches one how to actively and consciously read, understand, evaluate, and analyse any given piece of written material. Though I'm guessing it's adaptable to anything. It teaches you how not to read passively, how to look for context clues, fallacies, rhetorical modes, and a whole host of stuff too numerous for me to stuff in here. I'm of the opinion that it should be a required course for everyone entering university or college, particularly those in the humanities where reading is the mainstay of one's existence.
