On the fly, as you travel, purchase postcards of the things you see and write your thoughts on the back. They are easy to carry, require no tools but a pen, and give you ready images if you can't or don't get the shots you want.
They can be easily affixed on hinges in a regular scrapbook or journal, or sorted into an album with plastic sheets so that you can see both the image and the notes you wrote on the back.
You could also affix postcards to the inside of your kitchen cupboard doors so you see them frequently - art, places you've visited, etc.
