Watercolours can be used to create colour field paintings. Think Mark Rothko, but not with oil paint.
You can do this by using either different shades of one colour, changing the intensity of each colour by the amount of water used, or by using multiple colours.
They can be allowed to blend, or allow each layer to dry and paint new layers on top. You'll achieve something more Rothko-like by allowing layers to dry before painting the next.
This can be done large or small scale. Large scale will allow you to create some dramatic wall art for your home. Small scale - in a journal for example - will allow you to experiment with different colours and techniques that you can use on larger-scale work later.
