Square
Do a square/circle collection where you use a shape punch to cut pieces from mail you receive, packaging of things you buy, flyers, envelopes, and other ephemera. You can do this digitally as well. You can see my digital one at lonita.net.
Packaging
Create poems or other collage from words and other things cut from packaging, flyers, magazines, or newspapers.
Colour
Create an entry for your paper journal or scrapbook that's nothing but images of things that are your favourite colour.
Time capsule
Create an entry about something you'd put in a time capsule. Talk about why you chose that item and wanted to include it.
Curriculum
Jump on the personal curriculum train, and put together some learning goals for yourself. Pick a topic, find the resources you want to include, grab that pen, and start reading.
Re-skill
Similarly, you could study up on a disappearing craft or skill, and write some instructions for it and project ideas for people.
Endings
Keep a list of the ways things end - conversations, work days, outings, chores, books, TV shows, etc.
Earworms
For next year, keep a list of all the earworms that earworm you. Make a playlist at the end of the year and share.
